SASSY SALAD – SPEEDY CAESAR

This salad is one of my favourites! Quick, easy and delicious!

SPEEDY CAESAR (serves 2)

YOU WILL NEED…

EGGS X 2 (1 EGG PER SERVE)

2 X BABY COS LETTUCE BUNCHES

1 1/2 CUPS OF SHREDDED PARMESAN

1/4 CUP OF CAESAR DRESSING (https://bettychronic.wordpress.com/2012/11/11/marvel-at-my-mayo/)

2 X BREAD ROLLS WHITE (CUT INTO 2 X 2 SQUARES)

5 X RASHERS OF BACON INTO BATONS

CHICKEN (OPTIONAL)

ANCHOVIES (OPTIONAL)

SALT/PEPPER

THE BREAK DOWN 
 
STEP ONE – Tear lettuce, rinse and dry. Refrigerate. 
 
STEP TWO – Cut the bread rolls into 2cm x 2cm squares, add salt/pepper and then lightly toast in an oven until crisp and
brown. 
 
STEP THREE – Cut the bacon rashers into batons, lightly dust in flour and then cook slowly in a moderate oven (180c).
 
STEP FOUR – As an option you can cook chicken and add it into the salad. Lightly season 1 x chicken breast and cook in olive oil. Tear up and add to salad once cooled slightly.
 
STEP FIVE – Get a large sized bowl, combine all ingredients (anchovies optional), mix thoroughly and add seasoning to taste.
 
STEP SIX – Poach 2 x eggs in vinegar water and use as garnish on salad (as pictured below).
