SASSY SALAD – CHILLI SLAW

Are you tired of serving up boring salads day to day?? Summer gets here and all you have is mixed greens with no inspiration to add? Well have I got a salad to blow your socks off!

Introducing the first member to my sassy salad collection….

THE CHILLI SLAW!

YOU WILL NEED…

Image2 CARROTS MEDIUM SIZED – HALVED AND SLICED FINELY

4 LARGE RADISHES – HALVED AND SLICED FINELY

1/4 RED CABBAGE – SLICED FINELY

1/2 CUP OF GRATED TASTY CHEESE

JUICE OF 1 LEMON

CORIANDER FOR GARNISH

1 TBSP CHILLI RELISH

2 TBSP CHILLI PESTO

1/2 CUP OF MAYONAISE

SALT AND PEPPER TO TASTE

(serves 4)

THE BREAK DOWN

STEP ONE – Collect your three main vegetables and get chopping! Easiest way to do it is to halve the little buggers, put them on their flat side and then slice finely. Suss my main page for safe chopping techniques to keep those digits in place!

STEP TWO – Pop the sliced veggies into a mixing bowl, add the grated cheese and mix thoroughly.

STEP THREE – Now for the best part! Place the mayonaise, chilli jam, lemon juice, chilli pesto in a bowl and whisk til combined. Add salt/pepper to taste and then add the chilli mayo to the raw slaw mix.

STEP FOUR – Mix the slaw in with chilli mayo and then add to a bowl to serve. Garnish with coriander.
