HOT “DIP” OF THE WEEK – HOLY HUMMUS

#Interesting hummus fact – Hummus is great for people with heart conditions! Being low in salt and high in protein this dip will get your ticker back into shape!

HOT DIP OF THE WEEK – HOLY HUMMUS

YOU WILL NEED…

400G CANNED CHICKPEAS

2 tbsp TAHINI PASTE

2 TBSP FRESH LEMON JUICE

1 TSP GROUND CUMIN

1 TSP GROUND CORIANDER

FRESH CORIANDER (AS MUCH AS YOU LIKE)

2 TBSP WATER (PREVENTS THE DIP FROM BEING TO DRY)

GARLIC TO TASTE

SALT AND PEPPER (FRESHLY CRACKED) TO TASTE

SPICY PAPRIKA TO GARNISH (CAN MIX IN GROUND CHILLI IF YOU LIKE A BIT OF BITE)

CUCUMBER/CARROTS/RADISHES/TORTILLA CHIPS

 

THE BREAK DOWN

STEP ONE – Rinse the chickpeas, drain and then place them in a mixing bowl.

STEP TWO -Add the following ingredients in with the chickpeas… Tahini paste, ground coriander, ground cumin, lemon juice, garlic, fresh coriander (leave some for garnish) and water. Mix all together.

STEP THREE- Roughly blitz all the ingredients in a processor, it doesn’t matter if there are a couple whole chickpeas remaining here and there after all imperfections add character to dishes such as these ones. Once blended return to bowl and add the salt and pepper to taste.

STEP FOUR – Cut up carrots, radishes and cucumber into bite size sticks. I also used white tortilla chips as a side for this dip, they can be found in most supermarkets. Once the dip is to your tasting put it in a bowl, garnish with paprika (paprika/chilli blend if you are game) and then scatter coriander leaves over the top.

STEP FIVE – ENJOY!
